Make the tapa easy to eat

Try picking up the toast or spoon as the diner will. The finish should accompany the main ingredient and stay within the bite.

For several identical pieces, set a portion per item. If you want greater visual presence, change the leaf’s placement and check the result before adding more.

Taste with the complete dressing

A sweet roasted vegetable can work with a mustard note; tomatoes welcome basil aroma. Decide on the amount with the dish’s oil, acidity and seasoning already adjusted.

In a salad, use baby leaves as part of the mixture. Smaller microgreens can provide a finishing detail: each crop page identifies the stage.

Give the team a clear recipe

Record the variety and amount alongside the other ingredients. If you change the crop, check its notices before updating the recipe.

For a vegetable dish, review the dressing and accompaniments too: cheese, egg or mustard may matter to the diner. Kitchen and front of house should share the same information.
