Choose by flavour

A few basil leaves and a few radish shoots change a dish in different ways. Decide what you want to add, then find a variety that does it well.

Four ways to find a match

If the recipe already includes an aromatic herb, taste the combination before adding another. One variety can be enough to give the dish a recognisable finish.

  • Echo a flavour: basil with tomatoes; pea shoots over pea soup.
  • Add contrast: radish with fresh cheese; mustard with roasted potatoes.
  • Keep it gentle: tatsoi in a rice bowl or a delicate broth.
  • Bring colour: Garnet Red amaranth on a pale soup; Firebird chard beside roasted vegetables.

Picture the whole bite

A fine leaf works as a detail; a pea shoot can add volume and a crisp bite. Think about how the diner will pick it up with the main ingredient.

For tapas, give each piece the same amount. In a salad, combine the leaves with the dressing before adjusting the balance. Flavour, texture and portion size are best judged together.

Bring it onto your menu

Try cilantro with lime in a taco, mizuna with noodles and ginger, or basil with tomato pasta. The cuisine filters offer new combinations built around ingredients you already know.

Can I substitute another variety of the same colour?
