Recipe idea

Scallops, cauliflower and Golden Streaks mustard

Seared scallops, smooth purée and brown butter with a small mustard-leaf accent.

What the greens add

The mustard note balances scallop sweetness and richness. Young leaves add a light texture and golden-green contrast against the purée.

At the pass

Place small groups beside each scallop; keep the leaves out of pooled butter.

Contains mustard, a declared food allergen.

Ingredients and preparation

Indicative build for 1 portion; adjust after tasting.

Indicative ingredients

  • 2–3 scallops, about 80–120 g total
  • 60 g house cauliflower purée
  • 10 g butter
  • 3 g capers and 3 ml lemon juice
  • 2 g Golden Streaks mustard (contains mustard)
  • Oil and salt for cooking

Suggested preparation

  1. Prepare smooth cauliflower purée; brown the butter and balance it with lemon and capers.
  2. Dry and sear the scallops on both sides to the kitchen's required cooking standard.
  3. Serve over purée with a little butter; add raw Golden Streaks at the pass.

Another possibility

Replace scallops with cooked prawns, adjusting mustard quantity to each bite.

Recipe idea

New potatoes, charred spring onion and Golden Streaks

A warm potato salad with lemon aioli and fresh mustard leaves as its final accent.

What the greens add

Mustard flavour suits potato and garlic without adding another sauce. Young leaves interrupt the creamy texture and golden-green colour makes the finish visible.

At the pass

Keep potato skins and char marks visible; rest the leaves on dry surfaces.

Contains mustard, a declared food allergen.

Ingredients and preparation

Indicative build for 1 portion; adjust after tasting.

Indicative ingredients

  • 150 g cooked new potatoes
  • 25 g spring onion
  • 20 g house lemon aioli
  • 3 g capers
  • 3 g Golden Streaks mustard (contains mustard)
  • 5 ml olive oil and a few drops of sherry vinegar

Suggested preparation

  1. Cook whole potatoes and cut them; char the spring onion with oil until its edges brown.
  2. Dress warm potatoes with oil, capers and a few drops of vinegar; arrange over small aioli dots.
  3. Add the spring onion and finish with raw Golden Streaks immediately before service.

Another possibility

Add roast chicken strips for a main-course salad with the same dressing.

  2. Add a few leaves to a leek and cheese tartlet.
  3. Try a small finish on roasted apple toast with mild cheese.
Taste your harvest and adjust the portion to your dish.
Does mild-tasting mustard still contain mustard?

Yes. Golden Streaks contains mustard; a mild flavour does not change that notice.

More about this variety

On the plate

Try the finely cut leaves over a soft egg or beside grilled pork. Their gentle mustard note works well with potato, apple and a little good olive oil.
