  • Illustrative 1-portion build: 170 g mixed ripe tomatoes
  • 70 g burrata; 4 g chopped black olive
  • 8 g toasted bread crumbs
  • 8 ml olive oil; 3 ml sherry vinegar; salt
  • 2 g micro green basil, adjust by tasting

Suggested preparation

  1. Toast the crumbs and cool them; cut tomatoes into shapes suited to each variety.
  2. Season tomatoes with salt, vinegar and some oil; arrange them around the burrata.
  3. Add olive and crumbs, finish with the remaining oil and distribute green basil at the pass.
