Coriander's citrus and herbal character offers a counterpoint to roasting, warm spices and yoghurt. The shoots give small aromatic bites between pieces of cauliflower.

  • Illustrative 1-portion build: 160 g cauliflower
  • 80 g crushed tomato; 40 g cooked chickpeas
  • 25 g plain yoghurt; 8 ml olive oil
  • Cumin, paprika, garlic and salt to taste; 5 ml lemon juice
  • 3 g micro coriander as a starting point for tasting adjustments

Suggested preparation

  1. Roast the cauliflower with some oil and the spices until tender and browned.
  2. Reduce the tomato with garlic, add the chickpeas and balance its acidity; mix the yoghurt with lemon separately.
  3. Plate the tomato, cauliflower and yoghurt; add coriander at the pass, after all oven cooking.

Another possibility

Use roasted aubergine instead of cauliflower, retaining the coriander finish. Adjust the shoots to the actual crop's intensity.
