Handling and ingredients

A leaf’s name matters as much as its flavour. Identify the crops, read their notices and make sure kitchen and front of house know what each finish contains.

When preparing the leaves

Wash hands and clean utensils and surfaces. Keep produce separate from raw meat and fish. The FDA recommends rinsing fresh produce under running water without soap and refrigerating cut produce.

Washing does not remove every microorganism. Include these steps in your kitchen’s hygiene practices and follow the reference for fuller guidance.

Notices for our selection

Golden Streaks and Ruby Streaks contain mustard. Albina fava contains fava bean and should be avoided by people with G6PD deficiency. Keep these notices when combining crops.

Read the notice alongside the name

  • A “nutty” tasting note describes flavour; it is not a statement about which allergens the product contains.
  • A crop page without a notice is not an allergen-free declaration.
  • “Eco” or “organic” identifies some seed selections; it does not certify the harvested tray as organic here.
  • When substituting a variety, check its ingredients and notices before serving.

When preparing a mixture

Record every variety in the recipe and keep the list beside the mise en place. Update it whenever you change a leaf so the next shift has the correct information.

Pass the diner’s requirements to the person preparing the dish. Resolve questions using product information and the complete recipe before serving.

Kitchen questions

Does mild mustard still contain mustard?

Yes. Flavour intensity does not change the ingredient notice.

What should I remember when using Albina fava?

It contains fava bean. People with G6PD deficiency should avoid it; keep the notice when using it in mixtures too.

Can I describe a mixture as allergen-free?

That requires checking the ingredients and handling of the complete recipe. Do not infer it from the absence of catalogue notices.
